What each ingredient does

Peaches
Provide the fruit that forms the body and flavor of the preserves.
Granulated sugar
Sweetens the preserves and builds the syrup that Preserves the fruit.
Strained honey
Adds sweetness and a floral note while contributing to the syrup's body.

The step that matters

Boiling the peach slices until tender. Boiling in the syrup must be long enough to soften the fruit fully but not so long that it breaks apart. Drying the slices before rolling in sugar helps the coating stick and keeps the preserves from becoming overly wet.
