Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Apples
Provide the main body and flavor of the filling once stewed dry.
Sugar
Adds sweetness and helps the top brown during baking.
Butter
Adds fat and richness, giving the pudding a tender texture.
Egg yolks
Add richness and help the filling set as it bakes.
Lemon juice
Adds acidity that brightens the sweetness and deepens the flavor.

The step that matters

Stew the apples until very dry. Excess moisture from wet apples dilutes the filling and keeps the pudding from setting firmly, leaving it soggy in the centre.

Swap the apple

How well each one fits the dish's main ingredients (sugar, butter, egg, lemon):

  1. Vanillafits better
  2. Orangefits better
  3. Raspberryfits better
  4. Applethe original

Fit is the average pairing score against sugar, butter, egg, lemon. Candidates are from the same food group and used in at least 100 recipes.
