What each ingredient does

Peaches
Provide the fruit that forms the body and flavour of the preserve.
Sugar
Sweetens the fruit and helps preserve it by drawing out moisture.

The step that matters

Boiling the peach slices in the syrup until tender. Boiling too briefly leaves the fruit firm and under-penetrated by syrup, while overboiling breaks the slices down. Sugar absorbed gradually through the fruit keeps it intact and preserves it.
