Sweetmeat Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, mix the beaten eggs with the sugar until well combined.

  3. Melt the butter and pour it into the egg and sugar mixture.

  4. Add the lemon juice and zest.

Assemble and bake

  1. Line a baking dish with the pastry.

  2. Spread a layer of sweetmeats or preserves on the pastry.

  3. Pour a layer of the egg mixture over the sweetmeats.

  4. Add another layer of sweetmeats on top.

  5. Pour the remaining egg mixture over the sweetmeats.

  6. Bake in the preheated oven until set and golden.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set the custard as they cook, giving the filling its structure and body.
Butter
Adds richness and fat, giving the filling a tender, smooth texture.
Sugar
Sweetens the custard and helps it brown in the oven.
Sweetmeats or preserves
Provide fruit sweetness and concentrated flavour in the layers.
Lemon
Adds acidity and aroma that brighten the sweet filling.

The step that matters

Bake until set. Eggs thicken as their proteins coagulate with heat. Underbaking leaves the filling runny, while overbaking can make it grainy or cause it to weep.

Swap the peach

How well each one fits the dish's main ingredients (butter, sugar, lemon, egg):

  1. Vanillafits better
  2. Orangefits better
  3. Raspberryfits about as well
  4. Peachthe original

Fit is the average pairing score against butter, sugar, lemon, egg. Candidates are from the same food group and used in at least 100 recipes.
