Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Milk
Forms the liquid base of the sauce, which thickens as it cooks.
Flour
Thickens the milk into a smooth sauce body.
Egg yolks
Enrich the sauce and thicken it as they gently cook.
Butter
Adds fat for richness and a smooth, glossy texture.
Hard boiled eggs
Form the solid base of the dish, held in the sauce.

The step that matters

Adding the yolk mixture to the sauce. Egg yolks can curdle or scramble if they get too hot too fast. Cooking gently while stirring keeps the sauce smooth and lets the yolks thicken it evenly.
