Potted Head

Ingredients

Directions

  1. Scrape and wash the heads in salt and water, then soak in fresh water for 2 hours.

  2. Place the heads in a pot of cold water and boil until the meat is tender.

  3. Remove the meat, cut it into dice, and return the bones to the pot. Boil gently for 3 hours.

  4. Strain the broth through a colander into a bowl and let it stand overnight.

  5. Remove the grease from the broth, then add jelly, cinnamon, allspice, salt, and pepper.

  6. Mix in the diced meat and bring to a boil.

  7. Add the sherry and pour the mixture into molds.
