Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the mixture

  1. Combine the mashed potatoes, salt, pepper, butter, and enough hot milk to moisten in a bowl.

  2. Let the mixture cool slightly, then fold in the beaten egg yolks.

  3. Gently fold in the beaten egg whites.

Bake

  1. Transfer the mixture to a baking dish and bake at 400°F (200°C) for 10 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mashed potatoes
Form the bulk of the puff and give it a soft, fluffy body.
Egg yolks
Enrich the mixture and add richness and structure as it sets.
Egg whites
Whipped into foam, they lighten the mixture and help it rise in the oven.
Butter
Adds fat for richer flavor and a softer, more tender texture.
Hot milk
Moistens the potatoes so the mixture is smooth and easy to fold.

The step that matters

Fold in the egg whites gently. Whipped egg whites trap air that makes the puff rise. Stirring or deflating them vigorously knocks out that air, so the puff bakes up flat and dense instead of light.

Swap the potato

How well each one fits the dish's main ingredients (pepper, butter, milk, egg):

  1. Capsicumfits about as well
  2. Potatothe original
  3. Asparagusfits about as well
  4. Chivefits less well

Fit is the average pairing score against pepper, butter, milk, egg. Candidates are from the same food group and used in at least 100 recipes.
