What each ingredient does

Gelatin
Optionally added to the sherbet mixture to help it set firmly.
Sugar
Dissolved into syrup to sweeten the sherbet and soften its icy texture.
Lemon juice
Adds acidity that brightens the sherbet flavor.

The step that matters

Boil sugar and water, then cool the syrup before adding juice. Adding juice to syrup that is still hot can dull its fresh flavor and fruit aroma. Letting the syrup cool first keeps the juice tasting bright before the mixture is strained and frozen.

Swap the currant

How well each one fits the dish's main ingredients (orange, banana, pineapple, lemon, sugar, gelatin):

  1. Vanillafits better
  2. Mangofits better
  3. Figfits better
  4. Currantthe original

Fit is the average pairing score against orange, banana, pineapple, lemon, sugar, gelatin. Candidates are from the same food group and used in at least 100 recipes.
