What each ingredient does

Melon
Forms the body of the preserves, softening to a tender texture after soaking and boiling.
Sugar
Sweetens the preserves and thickens the syrup as it boils down.
Coarse sea salt
Draws water out of the melon during the salt soak, firming its flesh.

The step that matters

Boil the mixture until it thickens. Sugar concentrates as water evaporates, and the syrup sets as it cools. Stopping too early leaves a thin syrup, while cooking too long can scorch the sugar or make the preserves hard.

Swap the melon

How well each one fits the dish's main ingredients (sugar, ginger, cinnamon, lemon, orange):

  1. Limefits better
  2. Vanillafits better
  3. Blueberryfits better
  4. Melonthe original

Fit is the average pairing score against sugar, ginger, cinnamon, lemon, orange. Candidates are from the same food group and used in at least 100 recipes.
