What each ingredient does

Bacon
Adds fat that bastes the chops and contributes savory, salty flavor as it renders and browns.
Chops
Provide the main protein; their thickness determines how they cook through under the broiler.

The step that matters

Turning the chops almost continually. Frequent turning under intense broiler heat promotes even cooking and prevents the surface from scorching before the interior is done.
