Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Stir flour into boiling milk until smooth.

  2. Add sugar and flavor with lemon rind or nutmeg.

  3. Bring to a boil, then add butter and let cool.

  4. Once cool, mix in beaten eggs.

Bake and serve

  1. Butter 4 small molds and pour the mixture into each.

  2. Bake in a hot oven at 400°F (200°C) until puffed.

  3. Turn out and top each puff with a little jam.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms the starchy structure that holds the puffs together as they set.
Eggs
Add structure and help the puffs rise and set as they bake.
Butter
Adds fat for richness and a tender texture in the finished puffs.
Milk
Hydrates the flour and provides moisture for steam to lift the batter.
Sugar
Adds sweetness and contributes to browning at the surface.

The step that matters

Bake until puffed. Baking in a hot oven turns moisture in the batter into steam that lifts the puffs. Underbaking leaves them collapsed and wet inside, while the structure needs time to set.
