What each ingredient does

Semolina
Forms the firm, slightly grainy body that holds the dessert together when cooled.
Butter
Fries the semolina and almonds, adding richness and golden browning.
Sugar
Sweetens the syrup and helps keep the cooled dessert moist.
Blanched almonds
Add nutty flavour and a crunchy texture to the cake.
Lemon juice
Adds acidity that brightens the sweet syrup and balances its sweetness.

The step that matters

Adding the hot syrup to the semolina. Pouring the syrup slowly while stirring over low heat lets the semolina absorb it evenly. Adding it too fast or on high heat can leave soggy spots or scorch the mixture.
