Persian Tahdeeg

Ingredients

Directions

Prepare

  1. Soak the rice for a few hours in hot water and some salt before cooking.

  2. Peel the potatoes and slice them in a round shape. Optionally use unpeeled potatoes.

  3. In a medium-sized pot, fill it halfway with water and bring the water to a boil.

Parboil the rice

  1. Add the rice (and the water it was soaking in) and let it cook for a few minutes until it starts boiling.

  2. Occasionally pick a few rice grains with a spoon and chew on them to see if they have softened.

  3. When the rice is half-crunchy half-soft, take it out and drain it in a kitchen strainer.

  4. Run tap water over the rice to wash out some of the salt.

Layer and steam

  1. Pour the oil into the pot and add 4 ounces of water.

  2. Lay the potatoes in the bottom of the pot.

  3. Add a bit of salt to the potatoes.

  4. Pile the rice loosely in the shape of a mountain on top of the potatoes.

  5. With the back of a spoon, make five holes, one in the center and four around it, so that the rice can breathe during cooking.

  6. Spread a little water on top and close the lid.

  7. Let it cook for a couple of minutes on high heat.

  8. When the rice starts to steam, change the setting to medium heat and let it cook for about 15 minutes.

  9. Then turn the heat to medium-low, sprinkle some cooking oil to stop it from drying, and let it cook for another 10 minutes.

What each ingredient does

White long grain rice
Forms the fluffy body of the dish and, once crisped at the base, the golden crust.
Cooking oil
Fries the bottom layer of rice to a crisp and keeps the top from drying out.
Potatoes
Form a golden, crisp layer under the rice that browns in the hot oil.

The step that matters

Parboiling the rice until half-crunchy half-soft. Rice that is cooked through before layering turns mushy when steamed. Stopping at a firm centre lets it finish gently in steam and oil, keeping the grains separate.
