Why it works: Cinnamon and vanilla match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 5,287 recipes. Both carry 4-methoxybenzaldehyde, which smells sweet, anise. The science ↓

Povitica 2 Austrian Holiday Bread

Oven350°F
Time2 hours

Ingredients

Directions

Make the dough

  1. Dissolve yeast in 1/2 cup warm water.

  2. Mix remaining ingredients as you would for bread with about 9 cups flour (do not add flour all at once; 9 cups is approximate, as with all bread many things including temperature and humidity effect how much flour you need. Use enough to make a smooth pliable nonsticky dough).

  3. Knead well.

  4. Let rise 2 hours.

Fill and shape

  1. Mix filling ingredients together while milk is still warm.

  2. Spread or roll dough on tabletop, making sure you have no holes.

  3. Spread filling on top.

  4. Roll up, then coil as a snake.

Rise and bake

  1. Let rise 2 hours in large greased roaster.

  2. Bake 2 hours at 350°F.

What each ingredient does

Eggs
Add richness and structure to the dough, helping it hold its shape as it bakes.
Butter
Adds fat for a tender crumb and rich flavor in both dough and filling.
Milk
Adds moisture and softness; scalding it deactivates enzymes that would weaken the dough.
Yeast
Produces carbon dioxide gas that makes the dough rise and become airy.
Ground walnuts
Form the rich, sweet filling that gives the roll its characteristic flavor and texture.
Flour
Provides the gluten structure that traps gas and gives the dough its chewy body.

The step that matters

Spread the dough without holes before adding filling. Any holes or thin spots let the filling leak out during rising and baking, and the dough can tear when rolled, so an even, unbroken sheet keeps the filling sealed inside the roll.

Swap the walnut

How well each one fits the dish's main ingredients (milk, sugar, butter, egg, flour, cinnamon, vanilla):

  1. Almondfits better
  2. Chestnutfits better
  3. Hazelnutfits about as well
  4. Walnutthe original

Fit is the average pairing score against milk, sugar, butter, egg, flour, cinnamon, vanilla. Candidates are from the same food group and used in at least 100 recipes.
