Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggplants
Form the bulk of the dish and soften into a tender, moist texture when fried.
Onions
Caramelise to golden brown, adding sweetness and savoury depth to the base.
Ginger-garlic paste
Adds pungent aroma and flavour as it fries in the oil.
Kobbari karam podi
Coats the eggplant pieces, adding spiced flavour and aroma during the final frying.

The step that matters

Frying the eggplants on low heat until tender. Eggplant absorbs oil quickly and can turn greasy or stay spongy if the heat is wrong. Low, steady heat lets the flesh cook through and soften evenly without burning the onion-spice base.
