Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Beaten with sugar to trap air, giving the cake its light structure.
Flour
Forms the cake's main structure once it sets in the oven.
Butter
Adds fat for richness and a tender crumb.
Sugar
Sweetens the cake and helps hold air when beaten with the eggs.
Coffee extract
Adds a strong coffee flavour to the cake.

The step that matters

Beat eggs and sugar together for 5 minutes.. Beating incorporates air into the eggs, which gives the cake its rise and light texture. Under-beaten eggs can produce a dense, flat cake.
