Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped whites add air for a light, fluffy texture; yolks enrich the batter.
White flour
Provides structure as the batter sets in the pan.
Cream
Adds fat and richness, giving a tender, moist pancake.
Milk
Adds liquid that hydrates the flour and forms the batter.
Butter
Fat for frying that browns the pancake surface and adds flavour.

The step that matters

Turning the pancakes. Turn them once the bottoms are light brown. Turning too early tears the soft batter, and waiting too long over-browns them before the centre sets.
