Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Baking potatoes
Starchy base that mashes into a fluffy, soft body for the dish.
Milk
Adds moisture and loosens the mash into a creamy texture.
Butter
Adds fat for richness and smooth mouthfeel.
Green onions
Provide fresh, mild onion aroma and flavour throughout the mash.

The step that matters

Cook the potatoes until fully tender before mashing. Potatoes that are not fully cooked through stay firm and lumpy, and they cannot mash smoothly. Cooking until a knife or fork slides in easily gives a soft starch that blends evenly with the milk and butter.

Swap the onion

How well each one fits the dish's main ingredients (potato, milk, butter, pepper, sauce):

  1. Capsicumfits better
  2. Tomatofits about as well
  3. Asparagusfits about as well
  4. Onionthe original

Fit is the average pairing score against potato, milk, butter, pepper, sauce. Candidates are from the same food group and used in at least 100 recipes.
