The pairs that carry this dish. Each one is judged two ways: how much aroma chemistry they share, and how many recipes mention both.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Form the bulk of the cutlet, giving a soft, starchy body that holds its shape when mashed.
Eggs
Bind the mashed potato so the cutlets hold together during shaping and frying.
Plain flour
Absorbs moisture and stiffens the mixture, making it easier to shape.
Onion
Adds savoury flavour, sweetness from browning, and aroma to the potato.
Dried breadcrumbs
Form a crisp, golden coating that browns in the hot fat.

The step that matters

Frying the coated cutlets in hot fat. If the fat is not hot enough, the breadcrumb coating absorbs oil and turns greasy instead of browning and crisping. Frying on both sides until golden brown also ensures the coating sets and the interior is heated through.

Flavor stand-ins for the onion

How well each one fits the dish's main ingredients (potato, egg, flour, butter, pepper):

  1. Chivebetter flavor fit
  2. Asparagusbetter flavor fit
  3. Spinachbetter flavor fit
  4. Onionthe original

Fit is the average pairing score against potato, egg, flour, butter, pepper. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
