What each ingredient does

Blue cornmeal
Forms the thick body of the mush and gives it its flavor and color.
Water
Hydrates the cornmeal so its starch swells and thickens into a cereal.

The step that matters

Stirring the cornmeal while it cooks. Cornmeal can settle and scorch on the bottom of the pan at low heat. Constant stirring keeps it smooth and evenly cooked, and coarser meal needs more time to soften fully.
