What each ingredient does

Tofu
Provides the main body of the dish, with its texture firming up as its water is reduced.

The step that matters

Sautéing the tofu until light golden brown. Browning happens on the surface of the tofu pieces when they are dry and hot enough. Cooking until light golden brown develops flavor, while stopping sooner leaves the pieces pale and soft.
