Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Molasses
Provides sweetness, dark colour and moisture, and a rich flavour that suits the ginger.
Cheese
Melts into the molasses to add richness and fat, giving the cake a tender crumb.
Soda
Reacts with the acidic molasses to produce gas, helping the cake rise and lighten.
Flour
Forms the structure of the cake as its starches set during baking.

The step that matters

Adding the soda. Soda reacts quickly with the acid in molasses, so it should be stirred in vigorously and the batter baked promptly to keep the gas bubbles that lighten the cake.
