Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms the structure that holds the cookie's shape as it bakes.
Shortening
Adds fat that tenderises the crumb and carries flavour.
Eggs
Bind the dough and add structure and richness.
Sugar
Sweetens the cookies and helps them brown at the edges.
Baking powder
Releases gas during baking so the cookies rise and lighten.

The step that matters

Rolling out thin. Dough rolled thin and cut to an even thickness bakes evenly. Thick or uneven pieces stay soft in the middle while thin edges over-brown.
