Directions
Make the dough
Cream together the margarine, cheese, salt and pepper with your hands.
Add the flour.
Form the dough into two cylinders, each the diameter of a half-dollar (or Toonie).
Wrap the cylinders in waxed paper and chill thoroughly (overnight is best).
Bake and store
Slice the chilled dough into centimeter (or 1/4”) circles and place on a cookie sheet.
Bake at 300 °F for about 10–15 minutes, until lightly browned on the edges.
Remove from the oven and allow to cool on a cooling rack before storing in an airtight container.

What each ingredient does
- Vegan margarine
- Provides fat that makes the dough rich and tender and helps the snacks brown lightly.
- Flour
- Gives the dough its structure so the cut rounds hold their shape while baking.
- Vegan cheddar-style cheese
- Adds savoury flavour and fat, and helps the dough bind and brown at the edges.
- Cayenne pepper
- Adds heat and a sharp, aromatic bite that comes through the rich dough.
The step that matters
Chilling the dough thoroughly. Cold, firm dough keeps its shape when sliced and does not spread in the oven. The fat must be solid so the rounds bake crisp rather than flattening into greasy discs.
