What each ingredient does

Chicken breasts
Provide the main protein; cooking them briefly and without browning keeps them tender.
Cornstarch
Thickens the sauce as it heats, giving it a glossy, slightly thickened body.
Soy sauce
Adds salty, savory flavor that seasons the chicken and the sauce.
Snow peas
Add crisp-tender texture and fresh sweetness to the stir-fry.

The step that matters

Do not let the chicken brown. Cooking the strips briefly over steady heat, stirring constantly, keeps them tender and juicy. Browning toughens the surface and can make the chicken dry.
