What each ingredient does

Raspberry
Provides the main fruit flavor, color, and body of the syrup.
Lemon juice
Adds acidity that brightens the raspberry flavor and balances sweetness.
Orange juice
Adds sweet citrus aroma and flavor, and is best stirred in off the heat to keep it fresh.

The step that matters

Stir in the orange juice off the heat. Orange juice has delicate aromas that fade and turn flat with prolonged heat. Adding it after the pan leaves the burner keeps its bright citrus flavor in the finished syrup.
