What each ingredient does

Red potato
Becomes tender and starchy as it simmers, thickening the stew and giving it body.
Garbanzo beans
Adds firm texture and substance that holds its shape during simmering.
All-purpose flour
Starch that thickens the cooking liquid into a looser sauce as it simmers.
Onion
Softens and sweetens as it cooks, forming the flavor base of the dish.
Yellow bell pepper
Softens while sautéing, adding mild sweetness and tender texture.

The step that matters

Cooking the flour with the spices. Stirring flour into the hot oil and spices and cooking it briefly removes raw starch taste before liquid is added. Adding water too soon can leave lumps and a floury flavor.
