  2. Place pastry circles on parchment paper.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Egg yolks thicken the lemon curd as they cook and set into a smooth custard.
Sugar
Sweetens the curd and helps balance the sharpness of the lemon juice.
Butter
Adds richness and a smooth, glossy texture to the lemon curd.
Lemon juice
Provides the tart acidity that defines the curd's flavor.
Puff pastry
Its layered fat and dough puff into flaky, crisp layers as it bakes.
Heavy whipping cream
Whipped into stiff peaks, it adds airy, light structure and moisture to the layers.

The step that matters

Cook the curd until thick and coats a spoon. Egg proteins thicken gently over heat and can scramble if overheated, so cook slowly over simmering water while stirring, then chill to set the texture.
