Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cornstarch
Thickens the filling into a smooth, sliceable custard as it cooks with the boiling water.
Egg yolks
Enrich and thicken the filling, giving it a rich, smooth texture when cooked.
Egg whites
Whipped into a foam that forms the stable, airy meringue topping.
Granulated sugar
Sweetens the filling and, when whipped with egg whites, stabilizes the meringue.
Lemon juice
Adds acidity that brightens the flavor and balances the sweetness of the filling.
Butter
Adds fat for richness and a smoother mouthfeel in the filling.

The step that matters

Cool to room temperature before refrigerating. Chilling a hot pie traps steam and condensation under the meringue, which encourages weeping, where liquid beads up on the surface. Cooling first lets the filling set and the meringue stay dry and stable.
