Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped into a stiff foam that gives the filling its light, airy structure.
Sweetened condensed milk
Provides sweetness and body, thickening the filling as its acid meets the lemon juice.
Lemon juice
Adds acidity that sets the condensed milk into a firm, tangy custard.
Granulated sugar
Sweetens the egg whites and helps stabilise their foam as it is beaten.
Graham cracker crust
Forms the base that holds the filling and adds a toasted, sweet flavour.

The step that matters

Fold the milk mixture into the stiffly beaten egg whites. Folding gently keeps the air in the whipped whites. Stirring or deflating them makes the filling dense and reduces its lightness.
