Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Provide structure and bind the batter while whipping adds air for lift.
Sugar
Adds sweetness and helps the beaten eggs hold a thick, stable foam.
Flour
Forms the main structure of the loaf as the batter sets in the oven.
Baking powder
Releases gas in the batter to make the loaf rise and become lighter.
Vegetable oil
Adds moisture and tenderness to the crumb.
Almonds
Add nutty flavour and a bit of texture within the loaf.

The step that matters

Beat the eggs and sugar until thick. Whipping eggs and sugar traps air in the foam, which gives the batter lift. If the eggs are under-beaten, the loaf will be denser and may rise less in the oven.
