What each ingredient does

Buckwheat groats
Form the main body of the dish and give it a nutty, toasty flavour when cooked.
Cheese (in the method)
Adds saltiness, savoury flavour and fat to the dish.
Cream (in the method)
Adds richness, fat and a softer, moister texture.
Honey (in the method)
Adds gentle sweetness to balance the savoury seasonings.

The step that matters

Cook over a low heat for about 15 minutes. Low heat lets the coarsely milled groats absorb the water gradually and soften evenly. Higher heat can scorch the bottom of the pan while the grains in the centre are still firm.
