Why it works: Gelatin and cream match in chemistry and in kitchens. They rank in the top 7% of all ingredient pairs, and cooks put them together in 1,628 recipes. Both carry acetic acid, which smells sour, vinegar. The science ↓
Strawberry Cookie Pie
Ingredients
Directions
Make the crust
Chocolate Crumb Crust: Place 7 ounces of chocolate cookie wafers in a blender or food processor; process to make crumbs (you should have 1/2 cup).
In a bowl, mix the crumbs with 1/2 cup melted butter.
Press the mixture firmly onto the bottom and sides of a 9-inch pie pan.
Bake in a 350°F oven for 10 minutes.
Cool.
Make the strawberry filling
In a small saucepan, soften gelatin in water for about 3 minutes.
Meanwhile, in a blender or food processor, puree two baskets of strawberries until slightly chunky.
Transfer the puree to a large bowl and stir in lemon juice.
Add sugar to the gelatin mixture; stir over medium heat until the gelatin dissolves and the mixture is clear. Do not boil.
Remove from heat and cool for 5 minutes; mix the gelatin mixture into the pureed strawberries.
Chill, stirring occasionally, until the mixture is thickened but not completely set.
Beat the cream to form soft peaks.
Beat the strawberry mixture just until slightly foamy.
With a rubber spatula, fold the cream into the strawberry mixture until white streaks disappear.
Fill, garnish and set
Mound the mixture into the prepared pie shell.
Garnish with additional strawberries.
Chill until set, about 2 hours.

What each ingredient does
- Gelatin
- Sets the strawberry mixture so the filling holds its shape when sliced.
- Whipping cream
- Adds fat and air, giving the filling a light, creamy texture.
- Strawberries
- Provide the main flavor and moisture of the filling.
- Sugar
- Sweetens the filling and balances the tartness of the berries.
- Lemon juice
- Adds acidity that brightens the strawberry flavor.
- Chocolate cookie wafers
- Form the crumb crust that holds the pie shape with butter.
The step that matters
Dissolve the gelatin without boiling. Gelatin must fully dissolve over gentle heat; boiling weakens its setting power, and the mixture must be thickened but not fully set before folding in cream so the filling stays airy.
