Ingredients

Directions

Prepare the cake

  1. Heat oven to 375°F.

  2. Line a 15‑x‑10‑inch jellyroll pan with aluminum foil and coat with vegetable cooking spray.

  3. In a large mixer bowl, beat yolks and eggs at high speed for about 5 minutes until thick and lemon‑colored.

  4. While still at high speed, gradually beat in granulated sugar until the mixture is pale and thick.

  5. Gently fold in the dry ingredients (cake flour, baking powder, salt) except powdered sugar to blend thoroughly.

  6. Fold in warm water, vegetable oil, and vanilla.

  7. Spread the batter evenly in the prepared pan.

  8. Bake in the center of the oven for about 10 minutes until springy to the touch.

Roll and cool

  1. While the cake is baking, coat a clean dish towel with powdered sugar.

  2. Invert the hot cake onto the towel, close to one long edge.

  3. Gently peel off the foil.

  4. Trim ½ inch off each short side of the cake.

  5. Starting from the long side, tightly roll the cake and towel together.

  6. Set the roll on a rack to cool completely.

Fill and serve

  1. In a mixer bowl, whip cream to form soft peaks. Beat in sugar to form stiff peaks. Fold in lemon curd to blend thoroughly. Mix in chopped strawberries.

  2. Gently unroll the cooled cake.

  3. Spread the strawberry mixture evenly over the cake.

  4. Re‑roll the cake, seam side down.

  5. Dust the roll with powdered sugar.

  6. Cut into 8 equal slices (about 1¾‑inch each).

  7. Place each slice on a serving plate.

  8. Garnish with whole and halved strawberries.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped yolks and whole eggs trap air, giving the sponge its light, airy structure.
Cake flour
Provides the starch and gluten framework that sets the sponge so it can be rolled.
Whipping cream
Whipped into soft and stiff peaks, it adds moisture and a creamy texture to the filling.
Lemon curd
Adds acidity and richness to the filling, balancing the sweetness of the cream and strawberries.
Strawberries
Contribute fresh flavor, moisture and color to the filling and garnish.
Granulated sugar
Sweetens the batter and helps stabilize the beaten egg foam.

The step that matters

Rolling the cake while hot. The sponge is flexible only while warm; rolling it in a towel before it cools prevents cracking. Once cooled, it is set and will crack when unrolled for filling.
