Ingredients

Directions

Prepare

  1. Butter three 3-cup ovenproof molds or bowls; dust with sugar and set aside.

  2. In a saucepan, combine 1/2 cup sugar with milk, butter, and lemon peel; heat to melt butter.

  3. Combine flour and cornstarch; stir into hot milk mixture just to blend.

  4. Pour mixture into a blender or food processor fitted with a metal blade.

  5. With the machine running, add egg yolks, then lemon juice; whirl until smooth.

  6. Pour into a mixing bowl; set aside.

Make the batter

  1. Beat egg whites and cream of tartar until foamy. Gradually add remaining sugar and beat to form soft peaks.

  2. Fold egg whites into milk mixture, spoon equal amounts into the prepared molds.

Bake and serve

  1. Set molds in a large pan and pour in hot water to a depth of 1 inch.

  2. Bake in a 350-degree oven for 25 to 30 minutes until lightly browned and set.

  3. Remove molds from the water bath. Cool for 5 minutes; loosen edges and invert onto a large serving plate.

  4. Serve warm or chilled. Spoon some of the strawberry sauce around the puddings and pass remaining sauce separately.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whites trapped by beating set the pudding structure, while yolks add richness and body.
Flour
Starch thickens the milk base so the pudding holds its shape when set.
Cornstarch
Starch thickens the milk base, giving a smooth, tender set.
Butter
Adds fat for a rich mouthfeel and softer texture.
Lemon juice
Adds acidity that brightens the flavor and balances the sugar.
Milk
Forms the liquid base that the starches thicken and the eggs set.

The step that matters

Folding the egg whites into the milk mixture. Overmixing deflates the beaten whites, so the puddings bake up flat and dense instead of light and airy. Fold gently until just combined.

Swap the strawberry

The recipe marks strawberry as optional. How well each one fits the dish's main ingredients (sugar, milk, butter, lemon, flour, egg, cream):

  1. Vanillafits better
  2. Raisinfits better
  3. Figfits about as well
  4. Strawberrythe original

Fit is the average pairing score against sugar, milk, butter, lemon, flour, egg, cream. Candidates are from the same food group and used in at least 100 recipes.
