Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the lemon curd into a smooth custard as they gently set with heat.
Butter
Adds richness and a silky texture to the lemon curd.
Lemon juice
Provides the sharp acidity that balances the sugar in the curd and sauce.
Strawberries
Supply the main fruit flavor and soft, juicy body of the sauce.
Flour
Forms the starchy structure that holds each dumpling together while it steams.
Baking powder
Releases gas that makes the dumplings rise and turn light and fluffy.

The step that matters

Cook the lemon curd over low heat and do not boil. Egg yolks thicken as they warm gently, but high heat makes them scramble and turn grainy. Stirring constantly and stopping at slight thickening keeps the curd smooth.
