Chocolate Angel Food Cake

Ingredients

Directions

Prepare

  1. Preheat oven to 350°F.

  2. On a sheet of waxed paper, sift 1/4 cup of sugar with flour and salt three times.

  3. Beat egg whites in a large grease-free bowl with an electric mixer at medium-high speed until frothy.

  4. Add lemon juice and beat until soft peaks form.

Make the batter

  1. Evenly sprinkle the remaining 1 cup sugar over the whites, 1/4 cup at a time, and beat at medium speed for 1 to 2 minutes.

  2. Sift 1/4 cup of the flour mixture over the whites and gently fold in using a rubber spatula.

  3. Add vanilla and orange peel.

  4. Alternately fold in the remaining flour mixture and grated chocolate until well blended (fold gently to avoid deflating the egg whites).

  5. Scrape the batter into an ungreased 10-inch angel food or tube pan.

Bake and cool

  1. Bake until the cake is lightly browned and a knife inserted near the center comes out clean, 40 to 45 minutes.

  2. Remove the pan from the oven and invert onto the feet or over the neck of a bottle.

  3. Let cool 30 to 45 minutes.

  4. Run a knife around the edges of the pan and the center of the tube to remove the cake.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped to foam, they create the airy structure that lifts the cake.
Granulated sugar
Sweetens the cake and stabilizes the whipped egg white foam.
All-purpose flour
Provides the starch and gluten that set the cake's tender crumb.
Dark chocolate-orange bars
Adds chocolate flavor and color to the batter.
Lemon juice
Acidity helps stabilize the egg white foam and brighten flavor.

The step that matters

Fold the flour and chocolate gently. Overmixing or stirring vigorously deflates the whipped egg white foam, which is the only leavening in an angel food cake, producing a dense, squat cake.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, flour, egg, vanilla, orange, chocolate):
