Why it works: Celery and thyme match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 3,193 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓
Down-Home Vegetable Pot Pie
Ingredients
Directions
Make the pastry
Combine flour, sugar, salt, and baking powder in a food processor and pulse until blended.
Add butter and pulse until the mixture resembles fine crumbs.
Add 3 tablespoons ice water and pulse until the mixture is evenly dampened. Sprinkle with the remaining 1 ½ tablespoons water and process until the dough forms large crumbs and can be easily packed.
Transfer dough to a work surface and form into a ball. Knead dough 2 or 3 times.
Place dough on a large sheet of plastic wrap. Flatten into a ¾‑inch thick disk.
Wrap in plastic and refrigerate 1 hour.
Make the filling
Preheat oven to 400 °F.
Bring a medium pot of lightly salted water to a boil. Add potatoes, carrots, corn, and peas; boil 5 minutes.
Drain vegetables and transfer to a medium bowl.
In a medium saucepan, melt 1 ½ tablespoons butter over medium heat. Add onion and celery and cook, stirring often, until the onion has softened, 8 to 9 minutes.
Stir in oil and flour and cook over low heat, stirring, 1 minute. Stir in vegetable broth. Increase heat to medium. Cook, stirring, until the mixture thickens, about 2 minutes.
Stir in milk and cook, stirring constantly, until thickened, about 1 ½ minutes.
Pour sauce over vegetables and stir to mix well. Season with thyme, salt, and pepper to taste.
Transfer vegetables to a 9 ½‑ or 10‑inch deep‑dish pie pan and smooth the top. Let cool 15 minutes.
Assemble and bake
On a sheet of lightly floured wax paper, roll pastry into a circle just slightly larger than the pie pan. Invert pastry over the pie pan and peel off the paper.
Tuck edges of pastry inside the edge of the pan; poke several steam vents in the crust with a knife.
Bake until the pastry is golden, 50 to 60 minutes. Let stand briefly before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- All-purpose flour
- Thickens the broth and milk into a smooth sauce that holds the filling together.
- Butter
- Creates flaky layers in the pastry as it melts and steams during baking.
- Milk
- Adds richness and body to the sauce, making it creamy.
- Onion
- Softens and sweetens as it cooks, building the base flavor of the filling.
- Potatoes
- Hold their shape when cooked and add starchy bulk to the filling.
- Vegetable broth
- Supplies the liquid that becomes the savory body of the sauce.
The step that matters
Adding the pastry water gradually. Too much water makes the dough tough, while just enough keeps it workable and helps it bake up flaky, since gluten develops more with excess liquid and handling.
Swap the celery
How well each one fits the dish's main ingredients (flour, milk, thyme, onion, sugar, butter, potato):
- Cinnamonfits better
- Marjoramfits better
- Nutmegfits better
- Celerythe original
