Potato Patties with Garlic and Herbs

Time2 to 3 minutes per side

Ingredients

Directions

Boil and chill the potatoes

  1. Place steamer basket in large saucepan with about 2 inches water.

  2. Place potatoes in steamer basket, cover and bring to a boil.

  3. Steam potatoes, covered, until tender, about 20 minutes.

  4. Cool thoroughly.

  5. Put potatoes in plastic bag and refrigerate several hours or overnight.

Prepare the mixture

  1. Using a box grater, grate potatoes, removing any large chunks of skin.

  2. Place grated potatoes in large mixing bowl.

  3. Add salt and other seasonings, tossing mixture lightly with your hands to mix.

Fry the patties

  1. Heat about 1 1/2 tablespoons oil in large skillet; cast iron works best, but if you’re adding Parmesan cheese, use a nonstick skillet.

  2. Using about 1/2 cup grated potatoes each, form 3 or 4 patties, and place in skillet, leaving enough room between them to flip easily.

  3. Press patties firmly with spatula to shape.

  4. Cook over medium heat until nicely browned, flipping them once, 2 to 3 minutes per side.

  5. Repeat with remaining mixture, adding more oil as necessary.

  6. Place cooked patties in warm oven while making remaining patties.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Russet potatoes
Starchy flesh that grates and fries into a crisp-edged patty with a fluffy interior.
Garlic
Adds pungent aroma that mellows and deepens as the patties cook.
Grated onion
Adds moisture and savory sweetness that carries through the patty.
Thyme
Contributes herbal aroma that complements the potato flavor.

The step that matters

Cook the patties over medium heat until nicely browned. Chilled, grated potato holds its shape but can scorch before its centre heats through. Medium heat lets the surface brown evenly through the Maillard reaction while the interior cooks.
