What each ingredient does

Vegan margarine
Provides fat that carries flavour and gives the cookies a tender, spreadable dough.
Brown sugar
Adds sweetness and moisture, and its molasses content promotes browning and a chewy texture.
Egg replacer
Binds the dough and adds structure in place of egg.
Flour
Provides the structure that holds the cookies together as they bake.
Baking soda
Reacts with the dough to help it rise and spread and encourages browning.
Quick oats
Adds bulk and a hearty, chewy texture to the cookies.

The step that matters

Bake until the edges are done. Baking time sets the final texture; the edges set and brown first while the centres are still soft, so pulling them too late can make cookies dry and hard, and too early leaves them doughy.

Swap the raisin

How well each one fits the dish's main ingredients (sugar, egg, vanilla, flour, cinnamon, oats):

  1. Blueberryfits about as well
  2. Raisinthe original
  3. Figfits less well
  4. Pumpkinfits less well

Fit is the average pairing score against sugar, egg, vanilla, flour, cinnamon, oats. Candidates are from the same food group and used in at least 100 recipes.
