What each ingredient does

Dark chocolate
Provides the main structure, and sets firm as it cools.
Soya milk
Adds moisture and helps the melted chocolate become smooth.
Soy cream
Adds richness and a creamy, soft texture to the filling.
Margarine
Adds fat for a smooth, melting texture and a glossy finish.
Corn starch
Thickens the mixture so it holds its shape when chilled.
Vegan icing sugar
Adds sweetness and a fine, smooth texture to the filling.

The step that matters

Refrigerate until quite solid. The truffles firm up as the fat in the chocolate and margarine cools and sets. Shaping before the mixture is solid makes it sticky and hard to roll into balls.
