What each ingredient does

Cashewnuts
Ground into a paste, they thicken the gravy and give it a rich, creamy body.
Potatoes (in the method)
Fried until golden, they hold their shape and add a sturdy, starchy base to the dish.
Onions
Softened slowly, they build the sweet, savoury base of the gravy.
Curd
Adds tang and acidity, and its proteins help thicken the gravy as the water cooks off.
Milk
Adds richness and smoothness, softening the gravy's sharpness from the curd.
Ginger and garlic
Their aromatic compounds build the fragrant flavour base once ground and cooked.

The step that matters

Cooking the curd into the gravy. Curd can split and turn grainy when it meets heat. Stirring steadily and cooking until the water evaporates keeps the gravy smooth and lets the mixture thicken.
