What each ingredient does

Fonio
Forms the grain base of the dish, cooking into light, separate grains through repeated steaming.
Water
Hydrates the fonio grains during steaming so they swell and become tender.

The step that matters

Repeated steaming with a little water in between. Fonio grains need to absorb moisture and steam gradually to swell and soften. Resting them with a little water between steamings helps them hydrate evenly, and tight covering keeps steam in so the grains cook rather than dry out.
