What each ingredient does
- All-purpose flour
- Forms the structure of the stiff dough that holds the pieces together.
- Oil
- Adds fat that tenderizes the dough and helps the pieces brown in the pan.
- Sugar
- Adds sweetness and helps the pieces brown evenly.
- Cayenne
- Adds heat and pepper flavor to the dough.
The step that matters
Cook over heat until uniformly light brown. The pieces are small and thin, so they can scorch quickly before the centers cook. Stirring once in a while and keeping heat moderate helps them brown evenly on all sides.
