What each ingredient does

Gombos
Okra releases mucilage that thickens the sauce and gives it a slippery texture.
Crushed groundnuts
Ground peanuts add body, richness and a nutty flavour to the sauce.
Red palm oil
Fat carries flavour from the onions and gives the sauce its colour and richness.
Onions
Softened onions in oil build a sweet, savoury base for the sauce.
Cornstarch (in the method)
Starch swells when heated with liquid, thickening the sauce to the desired consistency.

The step that matters

Add the cornstarch and mix vigorously. Cornstarch must be stirred into hot liquid to disperse evenly; added lumpy or without stirring, it forms clumps and thickens unevenly.
