Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms the structure that holds the muffin crumb together as it bakes.
Baking powder
Releases gas in the batter so the muffins rise and become light.
Egg
Adds structure and richness, helping the batter set as it bakes.
Milk
Adds moisture and helps hydrate the flour for a tender crumb.
Cooking oil
Adds fat that keeps the muffins moist and tender.
Mirliton
Adds moisture and bulk to the batter as it cooks through.

The step that matters

Stir just until moistened. Overmixing develops gluten in the flour, which makes muffins tough and tunnelled instead of tender. Lumps are fine and should be left in the batter.

Swap the lime

How well each one fits the dish's main ingredients (flour, sugar, milk, cinnamon, egg):
