What each ingredient does

Plantains
Starchy base that softens inside while the outside turns golden when fried.
Palm oil
Frying fat that conducts heat and browns the plantain surface.
Onion
Softens and sweetens as it fries, adding savory depth to the dish.
Hot chili peppers
Add heat and aroma to the oil and the rest of the dish.

The step that matters

Frying the plantains until golden brown. The oil must be hot enough to brown the surface quickly; if it is too cool, the plantains absorb oil and turn greasy instead of crisp and golden.
