Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Green bananas
Provide the main body and starchy base of the porridge as they cook down.
Flour
Thickens the porridge so it becomes smooth and holds its body.
Milk
Adds creaminess and softness to the finished porridge.

The step that matters

Pour mixture into boiling water while stirring constantly. Starch in flour and banana can clump when it hits hot liquid unevenly. Constant stirring disperses the particles so the porridge thickens smoothly instead of forming lumps.

Swap the nutmeg

The recipe marks nutmeg as optional. How well each one fits the dish's main ingredients (banana, milk, flour, sugar, vanilla):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Clovefits less well
  4. Gingerfits less well

Fit is the average pairing score against banana, milk, flour, sugar, vanilla. Candidates are from the same food group and used in at least 100 recipes.
