What each ingredient does

Sweet potato
Forms the bulk of the pudding and adds moisture and starch that help it set.
Flour
Adds starch that thickens the batter and gives the baked pudding its structure.
Brown sugar
Adds sweetness and moisture, and helps the surface brown during baking.
Coconut milk
Adds moisture and richness, keeping the pudding soft and creamy.
Dried fruits
Adds sweetness, chewy texture and concentrated flavour throughout the pudding.
Margarine
Adds fat for richness and a tender texture, and keeps the pan from sticking when greased.

The step that matters

Bake until fully done. Grated potato and flour need enough heat and time for their starches to gelatinise and set. Underbaking leaves the centre wet and dense, so bake until the pudding is firm all the way through.

Swap the nutmeg

How well each one fits the dish's main ingredients (sweet potato, sugar, flour, coconut, milk, vanilla):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Turmericfits less well
  4. Gingerfits less well

Fit is the average pairing score against sweet potato, sugar, flour, coconut, milk, vanilla. Candidates are from the same food group and used in at least 100 recipes.
