Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set the custard into a firm, sliceable body as they cook.
Sugar
Sweetens the flan and, caramelized, forms the golden topping.
Milk
Provides the liquid base that the eggs set into a creamy custard.
Cornstarch
Thickens the custard so it holds its shape and stays smooth.
Lemon peel
Adds bright citrus aroma and flavor to the custard.

The step that matters

Heat the caramel until golden. Sugar darkens quickly once it starts to brown, so pulling it at golden avoids bitter, burnt flavor. The caramel must also be poured into the mold while still liquid so it coats the base.
